Sabatier Idéal carries on the centuries-old coutellerie tradition of Thiers, the knifemaking capital of France, with finely crafted cutlery forged from nitrogen-infused stainless steel. This series is made in Thiers under the "Lion Sabatier" marque and hardened to HRC 58-60, placing it between German and Japanese knives in hardness.
