The Nakiyo Three-Stage Sharpening System takes the guesswork out of sharpening by guiding your knife through three stages at a 20° angle—no water, angle guide, or practice required. V-shaped diamond (coarse), carbide (medium), and ceramic (fine) abrasives are quick-acting and leave an effective edge that is ideal for European knives but can be applied to Japanese knives as well. The durable ABS housing features a handle and non-slip rubber base. A fourth sharpening slot designed especially for scissors is also included.
This system is one of the fastest and easiest ways to achieve an effective edge, but you're looking for maximum results and minimum wear on your knife (and you don't mind taking some time to learn), consider using traditional whetstones.
Instructions
Grip the handle with your non-dominant hand and hold the sharpening system firmly against a solid surface. Hold your knife vertically and place the heel of the blade into the coarse stage. Maintaining light pressure, draw it toward you. Repeat for 20-30 strokes, then repeat for 20-30 strokes each in the medium and fine stages.
To sharpen scissors, open them slightly and insert the tips on either side of the scissor sharpening slot. Push them all the way in with constant pressure against the ceramic sharpening element. Repeat 20-30 times.
